Ingredients
- 3 eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup granulated sugar (200g)
- 1 1/2 cup light brown sugar, packed (226g)
- 1 stick of butter, softened to room temperature (113g)
- 1 teaspoon light corn syrup
- 2 teaspoons baking soda
- 1 1/2 cup creamy peanut butter (340g)
- 4 1/2 cups quick oatmeal (450g or 1 16oz container)
- 3/4 cup Reese’s peanut butter chips (113g)
- 2/3 cup Reese’s Pieces mini candy (130g)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix together eggs, vanilla, sugars, and butter.
- Add corn syrup, baking soda, and peanut butter. Mix to combine.
- Add oatmeal, peanut butter chips, and Reese's Pieces. Mix well until all ingredients are incorporated and evenly distributed.
- Scoop large teaspoons of dough onto a cookie sheet (2 inches apart).
- Flatten the dough balls slightly using the back of a spoon or your fingertips.
- Bake cookies for 12 minutes. Do not overbake. Cookies will be chewy.
- Leave cookies on the cookie sheet for ~3 minutes before transferring them to a cooling rack.
