Royal icing with meringue powder

Ingredients
- 4 cups powdered sugar, sifted
- 3 tablespoons meringue powder
- 7 tablespoons water
Instructions
- Sift powdered sugar into the bowl of your stand mixer.
- Add meringue powder.
- Whisk by hand powdered sugar and meringue powder together to incorporate.
- Add water.
- Using the whisk attachment for your stand mixer, slowly mix the icing on low speed until the powdered sugar is no longer dry.
- Increasing the mixing speed to medium (approximately number 6 on a Kitchen Aid mixer) and let the icing mix for 4 minutes.
- Stop the mixer and scrape down the sides and bottom of the mixing bowl where they may be dry powdered sugar.
- Continue to mix on medium speed for 5 more minutes.
- The icing should form lines in the mixing bowl and peaks on the whisk attachment.
- Transfer the icing to an airtight container. Store in the refrigerator until ready to use.
